Except for stuff like The Last of Us and Uncharted where they actually have to wear those mo-cap suits and literally act out the whole game
 
Also, not really, you need to be in a booth with professional sound equipment if you don't want the voices sounding like shit

And you still have to get good actors or you get something like Final Fantasy X (as much as I love that game the voices are ass) or Far Cry. It's actually pretty hard.
