Most of those depict the sky, which would look like that near sunset.

Right. As the article said, most of it is about contrasting human skin with the background.
Walk down a produce aisle and you'll see red and green together, purple and yellow together, so on and so on. Contrast makes things pretty. Pretty things are things we're more likely to buy.
Of course, they don't sell Cheez-Its or donuts in the produce aisle, so I don't know if you've ever seen one.
